Colorado Month
In honor of Colorado’s 150th Anniversary, Big Red F Restaurant Group is hosting Colorado Month at all Front Range restaurants. Throughout August, chefs Sheila Lucero and Kevin Grossi will partner with culinary innovators across the state to celebrate the resilience of our regional food system by highlighting thoughtful sourcing, deep relationships, and a commitment to keeping our community fed. Enjoy special dishes and drinks sourced with Colorado ingredients at all Big Red F locations.
Jax Fish House is featuring:
Alamosa Striped Bass with Munson Farm Corn & Rocky Mountain Fresh Tomatoes.
The Sustainability Story: Sustainability on the plate starts with water. We are proud to feature farm-raised striped bass from Colorado Catch in Alamosa. Rated "Green" (Best Choice) by the Monterey Bay Aquarium Seafood Watch, this incredible fish is raised using sustainable aquaculture practices right in the San Luis Valley. We've paired it with crisp sweet corn from Munson Farm and hydroponic tomatoes from Rocky Mountain Fresh to celebrate a truly resilient Colorado ecosystem.
