Born and raised in Atwater, MN, Chris made his way to Colorado via Hollywood, where he was a working actor for 10 years. While chasing the spotlight, he balanced his passion for acting with a passion for food, managing a fine dining Italian restaurant downtown. After racking up over 50 TV and commercial credits, he decided to get away from the L.A. grind and give Denver a shot. He worked his way up the ranks of Bonefish Grill, eventually buying in as the managing partner, before joining the family at Jax’s.
Known for his non-stop energy and enthusiasm, Chris leads his team by example—with an infectious smile, lightning speed, and laser focus on whatever comes his way. He believes that hospitality starts in-house, and that if you take care of your people the business will take care of itself.
When he’s not building his team and making new friends at Jax, you’ll find Chris at his other job—taking care of his family. He’s also a huge Oakland Raiders fan, an even bigger Star Wars fan, and he loves heavy metal. Ask him how many times he’s seen Metallica! A true jack-of-all-trades, he also has a BA in communications from the University of New Mexico, has been a member of the Screen Actors Guild for over 20 years, and every weekend he teaches Sunday School at St. Philip Lutheran Church.
Born and raised in beautiful Vero Beach, Florida, Austin grew up fishing and cooking fresh seafood. He fell in love with the drive, teamwork, and high energy of the kitchen, and rose through the ranks under the guidance of Chef Alessandro Amelio. His culinary adventures led him to Southern California, where he cooked alongside Chef Justin Braly in San Diego, and then to Denver, Colorado, where he’s living the Big Mountain Dream and cooking up a storm at Jax Fish House downtown. As the chef de cuisine, he enjoys coaching his team to work together, infusing each dish with passion and creativity. He loves seeing the smiles on guests’ faces when they taste his food, and he’s especially proud of the fact that his kitchen gets to support both local Colorado purveyors as well as sustainably-minded fishermen on the coasts.
When he’s not concocting new, delicious recipes at Jax, you’ll find Austin rock climbing, snowboarding, and hanging out with his German Shephard, Dano.
The child of foodies, Chelsea Carlton worked in restaurants throughout her high school years in Garrison, New York (where, fun fact, she attended prom with freaking Drake). After graduating from the Rhode Island School of Design with a BFA in textile design, she quickly realized that she didn’t love the process of selling her own art. She took a job with a catering company in New York and soon found that her passion for good design, good people, and good parties made her a great fit for the world of culinary event planning. That passion led Chelsea to Colorado in 2014, where she’s continued to grow her career and plan large-scale events for clients including Twitter, Dead & Company, Sterling-Rice Group, Land Rover, and many more. As Big Red F’s Sales & Catering Manager, Chelsea loves that she gets to provide top-notch eats and hospitality for a wide range of folks.
When she’s not working, you can find Chelsea searching for the perfect pho joint, noshing on strawberry Pop-Tarts® (the un-iced variety, thank you very much), camping, hiking, skiing, and hanging out with her family.
